I fondly remember many winter nights when I was a child that involved warm, moist gingerbread. What I love most about gingerbread is the smell that wafts around the house. It's one of those smells that always recalls happy memories for me.

I used to eat it plain or with powdered suger sprinkled on top, but I've recently been all about the cream cheese frosting.
Do you have a favorite dessert who's smell brings back wonderful memories?
1/2 cup Butter, softened
2 tbs Sugar
1 Large Egg
1 cup Molasses
1 cup Boiling Water
2 1/4 cups Flour
1 tsp Baking Soda
1/2 tsp Salt
1 tsp Ground Ginger
1 tsp Ground Cinnamon
Directions:
1) Heat oven to 325 degrees. Grease and flour 9x9 pan.
2) Mix thoroughly butter, sugar and egg. Blend in molasses and boiling water.
3) Stir together dry ingredients; blend into mixture. Beat until smooth.
4) Pour into pan and bake for 45-50 minutes. Serve with cream cheese frosting, sweetened whipped cream, powdered sugar or with applesauce.
I love gingerbread! I don't care if it's a "christmasy" dessert, I'd take it all year round. I have a feeling it'd be great with a big scoop of ice cream in the summer :)
ReplyDeleteI love when a recipe has such strong ties to memory :) Gingerbread really should get more coverage in its off-season (aka non-christmastime) as I think it would pair well with springy flavors too!
ReplyDeleteI absolutely love gingerbread! I usually just do homemade whipped cream on top, but cream cheese frosting is ALWAYS a good choice!

ReplyDeleteGingerbread is one of my favourites. My mom used to make this incredible ginger cake, but I haven't been able to have it since I went gluten free because one of the main ingredients was stout.
