The Green Bean Avalanche

One of the first things I did when I moved home in December was to open the refrigerator and freezer.  I hadn't cooked in months and, as I've said, I was going through withdrawal.   I didn't know I would be greeted by an AVALANCHE of frozen green beans from my mum's garden.

The only green beans I've ever been able to eat are roasted..... I've hated all other forms..... particularly frozen ones.  However, a friend of mine was visiting and he loves green beans, so I set out to find a recipe for frozen green beans I could stand.  Now, my go to person for cooking is Julia Child, so I opened my trusty "Mastering the Art of French Cooking" and I came upon a recipe for making frozen beans taste good, I mean really good.

Green Beans and shallots


Ingredients:
10 oz frozen green beans
1/2 cup chicken or vegetable broth
1/4 cup shallots
1/8 tsp salt
2 tbs butter
Pepper to taste




Directions:
Bring broth, shallots, salt and 1tbs. butter to a boil.  Add thawed green beans (thawed enough so they don't clump together).  Boil for 5 minutes covered.  Take cover off and add pepper and salt to taste.  Boil off rest of liquid tossing the beans as you go.  Put in serving dish and place pats of butter on top to melt.

    Of course, that's probably because it's all butter all the time. Ahh, Julia.

    they can taste delicious in stirfry's too, you know where the sauce is the main attraction (which let's face it, it's ALWAYS all about the sauce).
