I love chocolate.... I pretty much love anything that contains just a hint of chocolate...... unless it also contains mint, that's just unpleasant. So when I'm feeling blue or a little on edge the first thing I do is go straight for a morsel of the good stuff.
Gilbert keeps me well supplied with chocolate for these occasions. He always buys Dove because he finds it amusing how much they target women by putting "inspirational" messages on the wrapper. Every time I open one, I think of one I opened in College around Valentine's Day. It told me, "Chocolate will Always love you back." That has got to be the most NON-inspirational message I've ever read. And really not something someone who's alone wants to hear on Valentine's Day.
Anywho.... when a morsel of chocolate doesn't do the trick, I make these AMAZING brownies that I found on smittenkitchen. I've made 3 batches in the last 3 weeks. It's mainly due to something I call the Infantry and a little bit due to the fact that we're moving from my beautiful NH this week.
Ingredients:
3 oz. Unsweetened Chocolate, roughly chopped
1 stick unsalted butter, plus extra for pan
1 1/3 cups Granulated Sugar
2 Large Eggs
1 tsp Vanilla Extract
1/2 tsp flaky sea salt, or 1/4 tsp Tabel Salt
2/3 cup All-Purpose Flour
Directions:
1) Pre-heat oven to 350 degrees F. Line an 8x8-in baking pan with parchment, extending it up the sides. Butter the parchment.
2) Melt chocolate and butter together until only a few small buts remain. Can be done by heating in a bowl over simmering water or in the microwave in 30 second intervals.
3) Mix in Sugar, then eggs (one at a time), then vanilla and salt. Stir in flour with a spatula and scrape batter into the prepared pan, spread until even.
4) Bake for 30 minutes, or until a toothpick inserted into the center comes out batter-free.
Gilbert likes them best cooled, but if you're anything like me you'll like them not only cool but also gooey and right out of the oven :)
